As you know, in 2022, the Azbuka Syra company carried out a large-scale reconstruction of one of the cheese production buildings. As a result, production capacity was increased by 25%.

Today we want to talk about the technical strengthening of the cheese-making section of the second building. The work took place in two stages: May 2023 and January 2024. Previously installed in 2007, the equipment of the Technical company, namely the cheese forming and pressing area, and the automation system, was dismantled. Modern cheese-making equipment from the Spanish company FIBOSA was installed to replace him. The solutions offered by FIBOSA include all stages of the project, including the definition and study of processes, production and supply of equipment, installation, launch, implementation of know-how and technological consulting. This equipment ensures accurate and constant dosing of cheese grains by weight and size, with full use of cheese grains, increasing productivity and production in optimal sanitary conditions.

The purpose of the project was:

1. Ensuring the technical reliability of the equipment of the cheese production line.

2. Increasing the requirements for food safety of production processes.

3. Improvement of sanitary and hygienic indicators of finished products, due to closed processes of cheese forming stages, installation of a washing cabinet for replaceable cassettes for each cheese size.

4. Improving energy efficiency by reducing the load on the equipment of engineering environments (operation of a compressed air compressor).

5. Replacement of the process automation system (microelectronics based on Siemens controllers) and equipment operation programs.

6. Production of semi-hard cheeses in accordance with the quality indicators specified in the regulatory documentation for a specific type of finished product.

The project was implemented in a very short time, the production shutdown in total in the sum of 2 stages of implementation did not exceed 20 working days.

As a result of the modernization, Azbuka Syra acquired high-tech equipment for cheese making, which will ensure the company's leading position in the industry in the coming years and will continue to please consumers with the high quality of its products.
